Subject: More information is needed, but in short...
To more fully answer you question I would need to know a lot more about your fluid (solids, viscosity, rheology, type of gel) and the thickness and quality requirements of the final coating. However, a direct answer is that hydro-gel, such as used on medical instrument conductive pads typically use knife over roll. Photographic gels are coated with slot die or slot slide (more accurate). Battery separator layers are often done with knife or slot die.

Subject: There are several coating metthods...
There are several coating methods to consider (e.g., gravure, roll coating, slot die, curtain coating) and the choice depends upon factors suchs as: type of solvent, nominal thickenss, thickenss uniformity, production rate required, width of support, rheology of the fluid, number of layers required, number of passes allowed (for multiple layers), tmperature sensitivity of coated material, etc. Selection of a coating process requires a good understanding of technical as well as business requirements.
